By enhancing the flavor of the red meat and fat with dried five-flavor-fruit (Schisandra chinensis) that were pickled in sake, together the berries give off their own flavor while increasing that of the bear meat.

Hamburg Steak is a patty of ground beef. It is closely similar to the Salisbury steak. Made popular worldwide by migrating Germans, it became a mainstream dish in around the start of the nineteenth century.[1]
